Moist and Delicious Banana Bread Recipe

Have you ever met anyone of any age who didn't love homemade banana bread? This recipe is loaded with fresh banana flavor - about five medium sized bananas will yield the 2 1/3 cups - but a little more or less should be just fine. For a more fiber rich diet, I now like to use half white flour and half whole wheat flour in my cookies, cakes and muffins. One half cup of white flour has 1.3 grams of fiber and the same amount of whole wheat has over six). I've always been a big fan of walnuts (loaded with healthy Omega 3 fatty acids) so try adding 3/4 to one cup of walnuts for added flavor and texture. If you prefer banana muffins, this recipe will yield about twelve good sized muffins - baked at 325 degrees for 25 minutes.

  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 2 eggs, beaten
  • 2 1/3 cups mashed overripe bananas 
  1. Preheat oven to 350 degrees. Lightly grease a 9 x 5 inch loaf pan.
  2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
  3. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
